Ingredients

Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes
Yield: About 2 cups (16 servings at 2 Tbsp each)

  • 2 tbsp canola oil
  • ½ cup vinegar (apple cider or white)
  • 1½ cups water
  • ½ cup tomato paste
  • ½ cup sugar
  • 1 tbsp onion powder
  • 1½ tbsp molasses
  • 2 tbsp honey
  • 1 tbsp Worcestershire sauce
  • 2 tsp salt
  • 2 tsp vanilla extract
  • 1 tsp liquid smoke
  • ⅛ tsp paprika (or smoked paprika for extra depth)
  • ¼ tsp garlic powder
  • ¼ tsp black pepper

Instructions

Step 1: Heat the Oil

Place 2 tbsp canola oil in a medium saucepan over medium-high heat. Let the oil heat for about 1 minute until it shimmers slightly.

Step 2: Add Liquids and Sweeteners

Add the vinegar, water, Worcestershire sauce, honey, and sugar. Stir constantly until the sugar completely dissolves, about 2–3 minutes.

Pro Tip: Make sure the sugar is fully dissolved before moving to the next step to prevent graininess.

Step 3: Add Spices and Tomato Paste

Add the onion powder, liquid smoke, paprika, garlic powder, black pepper, vanilla extract, molasses, and tomato paste. Whisk thoroughly until smooth and uniform with no lumps.

Step 4: Bring to a Boil

Increase heat to high and bring the mixture to a full boil, stirring constantly to prevent scorching. Watch carefully — tomato paste can stick and burn easily!

Step 5: Reduce to a Simmer

Once boiling, immediately reduce heat to low. Simmer uncovered for about 1 hour, stirring occasionally (every 10–15 minutes). The sauce will reduce significantly, thicken, and darken in color. Stir more frequently during the last 15 minutes.

Step 6: Check Consistency

After 1 hour, the sauce should coat the back of a spoon. If too thick, thin with a splash of water or vinegar. If too thin, simmer another 10–15 minutes.

Step 7: Cool and Store

Remove from heat and cool to room temperature. Transfer to a clean glass jar or squeezable container. Keeps in the refrigerator for up to 2 weeks.

Step 8: Rest for Best Flavor

You can use immediately, but it tastes even better after resting in the refrigerator for 1–2 days. The complex flavors continue to develop!

Tips for Success

Stir constantly at first: Prevent the tomato paste from sticking and burning.

Low and slow simmer: Don't rush the 1-hour simmer. This is when the magic happens.

Watch the heat: Keep it at a gentle simmer, not a rolling boil.

Don't skip the vanilla: It adds warmth and rounds out the flavors beautifully.

Liquid smoke goes a long way: 1 tsp is perfect. More can be overpowering.

Use quality tomato paste: Since it's the base, use a good brand.

Adjust thickness: The sauce thickens significantly as it cools. Don't over-reduce!

Why This Recipe Works

  • Tomato paste: Concentrated tomato flavor without excess water
  • Molasses: Adds deep, bittersweet richness and dark color
  • Honey: Balances molasses with floral sweetness
  • Liquid smoke: Provides authentic smoky flavor without a smoker
  • Vanilla extract: Adds warmth and rounds out sharp edges
  • Vinegar: Cuts through richness and adds tang
  • Worcestershire: Contributes umami and complexity

Variations & Customizations

Extra smoky: Increase liquid smoke to 1½ tsp

Spicy version: Add ½–1 tsp cayenne pepper or chipotle powder

Sweeter sauce: Add 2–3 tbsp more honey or brown sugar

Bourbon BBQ sauce: Add ¼ cup bourbon during the simmer (alcohol cooks off)

Coffee BBQ sauce: Add 2 tbsp strong brewed coffee for earthy depth

Frequently Asked Questions

Can I use apple cider vinegar instead of white vinegar?
Yes! Apple cider vinegar adds a slightly fruity note. Either works great.

What if I don't have liquid smoke?
You can skip it, but you'll lose the smoky depth. Use smoked paprika instead for some smokiness.

Can I use vegetable oil instead of canola?
Yes, any neutral oil works (vegetable, grapeseed, avocado).

How long does it last?
Up to 2 weeks in the refrigerator in an airtight container.

Can I freeze it?
Yes! Freeze in ice cube trays or small containers for up to 3 months.

Why is vanilla in BBQ sauce?
Vanilla adds warmth and rounds out the flavors. You won't taste "vanilla" — it just makes everything taste more balanced and complex.

Can I double the recipe?
Yes! Use a larger pot and simmer for 1 hour 15 minutes to 1 hour 30 minutes.
