Instructions
Step 1: Make the Sponge Cake
- Preheat oven to 350°F. Grease a 9×13 inch baking dish.
- Whisk together flour, baking powder, and salt. Set aside.
- Beat egg yolks with ¾ cup sugar until pale and thick, about 2 minutes. Mix in milk and vanilla.
- Fold in the flour mixture until just combined.
- In a separate bowl, beat egg whites to soft peaks. Gradually add remaining ¼ cup sugar and beat to stiff peaks.
- Gently fold egg whites into the batter in three additions.
