The star of this Southern feast is the chicken fried steak - cube steaks marinated overnight in buttermilk, then coated in seasoned flour and fried to golden perfection. The result? A crispy, crunchy exterior with a tender, flavorful interior that melts in your mouth.

Ingredients

  • 4 6oz cube steaks or thin top round steak
  • 3 cups buttermilk
  • 1½ - 2 cups flour (for dredging)
  • Salt and pepper to taste
  • 2 tsp smoked paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • Vegetable oil for frying (about 1" - 2" in skillet)

Instructions

  1. Marinate the steaks: Place steaks in buttermilk for a minimum of 8 hours, preferably overnight. This tenderizes the meat and creates that signature tangy flavor.
  2. Prepare the coating: Mix flour with smoked paprika, onion powder, garlic powder, salt, and pepper in a wide bowl.
  3. Heat the oil: Pour oil into a cast iron skillet (about 1-2 inches deep) and heat over medium-high heat until a sprinkle of flour sizzles immediately.
  4. Double-coat the steaks: Remove steaks from buttermilk, dredge in flour mixture, dip back in buttermilk, then coat again in flour. This double coating creates extra crispiness!
  5. Fry to perfection: Carefully place coated steaks in hot oil. Fry for 2-3 minutes per side until golden brown and crispy.
  6. Drain: Place fried steaks on a wire rack over a baking sheet to drain excess oil while staying crispy.

Pro Tips

Don't overcrowd the skillet! Frying too many steaks at once will lower the oil temperature, resulting in soggy coating instead of crispy perfection. Work in batches if needed.

Creamy Country Gravy

Ingredients

  • 4 tbsp oil plus drippings from the skillet
  • 4-6 tbsp flour
  • 1 cup water
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Using the same skillet with drippings and about 4 tbsp oil over medium heat, sprinkle 4 tbsp flour over the oil and mix thoroughly.
  2. Cook for 1-2 minutes to form a roux (this removes the raw flour taste).
  3. Combine water and milk, then pour into the skillet while stirring constantly.
  4. Continue stirring until the gravy thickens to your desired consistency. Season with salt and pepper to taste.

Buttermilk Biscuits

Golden, flaky, buttery biscuits baked in a cast iron skillet - the quintessential Southern bread!

Ingredients

  • 1 cup (237ml) buttermilk
  • 9 tbsp (14g) cold butter, cubed (set aside 1 tbsp for skillet)
  • 2 cups (240g) flour (plus more for dusting)
  • 1 tbsp (12.5g) sugar
  • 3½ tsp (4g) baking powder
  • ¾ tsp (6g) salt

Instructions

  1. Prep: Adjust oven rack to middle position and heat oven to 450°F. Place 1 tbsp butter in a cast iron skillet and put in the oven to melt.
  2. Chill the buttermilk: Measure 1 cup buttermilk and place in freezer for 10 minutes while prepping other ingredients.
  3. Mix dry ingredients: Add flour, sugar, salt, and baking powder to food processor and pulse until thoroughly mixed.
  4. Cut in butter: Add cubed butter and pulse until mixture resembles coarse meal or small peas.
  5. Add buttermilk: Add chilled buttermilk to dry ingredients and pulse just until flour is incorporated and dough pulls away from sides of bowl. If too wet, add more flour 1 tablespoon at a time.
  6. Knead: Generously flour work surface. Dump dough onto surface, turn to coat with flour, and knead 5-6 times (about 30 seconds).
  7. Roll and cut: Flip dough to coat with flour, then roll out to ½" thick. Cut biscuits with a 3" round cutter (or your preferred size).
  8. Bake: Carefully place biscuits in the hot buttered skillet (dip top in butter first, then flip). Bake until tops are golden brown and crisp, 8-18 minutes (start checking at 8 minutes).

Easy Peach Cobbler

The perfect ending to this Southern feast! Make this ahead and pop it in the oven as you sit down to dinner - it'll be ready just in time for dessert.

Ingredients

  • 1 cup self-rising flour
  • ¾ cup + 2 tbsp granulated sugar (divided)
  • ½ cup butter, divided and melted separately
  • 1 (29oz) can sliced peaches in heavy syrup, undrained
  • Dash of cinnamon & nutmeg (optional)

Instructions

  1. Preheat oven to 350°F.
  2. In a medium bowl, coarsely mix flour, ¾ cup sugar, and ¼ cup melted butter. (Optional: add a dash of cinnamon and freshly grated nutmeg for extra flavor!)
  3. Sprinkle about one-third of the flour mixture on the bottom of a 9x9 baking dish. This will absorb the peach syrup and thicken it while baking.
  4. Add peaches with their juice to the dish. (If you prefer a drier cobbler, don't add all the liquid.)
  5. Sprinkle remaining flour mixture over the peaches, then sprinkle with the remaining 2 tbsp sugar. Drizzle with remaining ¼ cup melted butter.
  6. Bake for 40-45 minutes or until top is golden brown and bubbly. Let sit for at least 5 minutes before serving.
  7. Serve warm with vanilla ice cream or whipped topping!
