Ingredients
- 2 packages bone-in chicken breast halves (3 per pack), each half cut in half again — 12 pieces
- 2 packages chicken quarters (3 per pack), drumstick separated from thigh — 12 pieces (6 thighs + 6 drumsticks)
- Homemade BBQ Dry Rub (enough to coat all 24 pieces generously)
- 1–2 bottles Kentucky Bourbon BBQ Sauce (Hannaford store brand)
Instructions
Step 1: Rinse & Prep the Chicken
Rinse all chicken pieces under cold water — no need to pat dry! The moisture helps the rub adhere beautifully. Cut each breast half in half crosswise for even cooking. Separate drumsticks from thighs on the quarters. You'll have 24 pieces total — perfect for a crowd.
Step 2: Apply the Rub
Generously coat every piece with your homemade BBQ Dry Rub directly on the chicken. Press the rub in so it adheres well — the moisture from rinsing does the work for you.
Step 3: Par-Bake
Arrange chicken in a single layer on baking sheets. Bake at 350°F for 45 minutes. This gets the chicken fully cooked through so the grill is purely for flavor and char.
Step 4: Grill & Char
Transfer to a preheated grill over direct heat. Grill 10–20 minutes, turning occasionally, until nicely charred on all sides.
Step 5: Sauce It Up
In the last 10 minutes of grilling, brush on the Kentucky Bourbon BBQ Sauce generously. Let it caramelize and get sticky — that's the magic. Add a second coat if you like it extra saucy.
Step 6: Rest & Serve
Pull from the grill and let rest a few minutes before serving. The sauce will set up beautifully.
