Easy Buttermilk Biscuits
Prep Time: 20 minutes | Cook Time: 20 minutes | Servings: 6 large biscuits
Essential Tools
- Cast Iron Skillet
- Food Processor
- Mixing Bowls
- Rolling Pin
- Biscuit Cutter (3")
- Measuring Cups & Spoons
Ingredients
- 1 cup buttermilk
- 9 tbs cold butter - cubed (set aside 1 tbs for skillet)
- 2 c flour (a little more for dusting)
- 1 tbs sugar
- 3 ½ tsp baking powder
- ¾ tsp salt
Instructions
- Adjust oven rack to the middle, heat oven to 450°, place 1 tablespoon of the butter into a skillet and place into the oven.
- Measure 1 cup of buttermilk and place in the freezer for 10 minutes while prepping other ingredients.
- Add flour, sugar, salt and baking powder to a food processor, pulse until thoroughly mixed. Add cubed butter and pulse until it resembles coarse meal or small peas.
- Add buttermilk mixture to dry ingredients and pulse just until all flour is incorporated and batter pulls away from sides of the bowl. The dough should be stiff and not super wet. If the dough is wet, add more flour 1 tablespoon at a time, stirring to combine, until fairly stiff.
- Generously flour a work surface. Dump biscuit dough from bowl onto prepared work surface and turn to coat all surfaces with flour. Knead on counter 5-6 times (about 30 seconds).
- Flip over on the work surface to coat with flour then roll out to ½" thick.
- Depending on the size of biscuit cutter you use, I used a 3" and got 6 large biscuits and a little dough left over for a smaller one.
- Place biscuits in the prepared skillet (being careful as the skillet is very hot from the oven). As you carefully place the biscuits into the skillet, dip the top in the butter first then turn it over and place it into a spot. Do this with all remaining biscuits.
9. Place in oven and bake until tops are golden brown and crisp, 8 to 18 minutes. Start checking them after 8 minutes as ovens vary. You want them to be a nice golden brown, but not too brown.
