Old-Fashioned Homemade Vanilla Ice Cream — Two Ways
There's something magical about homemade ice cream. Not the store-bought kind — the real kind. The kind that takes a little time, a little patience, and rewards you with something so creamy and rich that you'll never look at a carton the same way again.
This recipe has been in the family for generations. It started life as an old-fashioned crank freezer recipe — the kind where everyone takes turns cranking and the anticipation is half the fun. We've kept that original version intact AND adapted it for a modern electric ice cream maker, so you can make it whichever way works for you.
Pair it with our Texas Sheet Cake for the ultimate Memorial Day dessert duo. 🍰🍦
What Makes This Ice Cream Special
- Egg-based custard — richer, creamier, and more scoopable than no-egg versions
- Evaporated milk — adds depth and a silky texture you can't get any other way
- Whole milk base — keeps it light enough to eat two scoops (or three)
-
Pure vanilla extract — simple, classic, and perfect

The original. The classic. The one worth gathering the family around.
Total Time: 2 hours | Yield: ~5 quarts
Ingredients
- 6 eggs
- 2 cups sugar
- ¼ tsp salt
- 1 tbsp vanilla extract
- 13 oz can evaporated milk (1½ cups + 2 tbsp)
- 1 gallon whole milk
- Chipped ice
- Rock salt
Instructions
- Beat eggs in a large bowl. Gradually add sugar, stirring constantly. Add salt, vanilla, and evaporated milk. Mix in about a pint of whole milk.
- Pour into the freezer can. Fill to the middle of the top board of the dasher (or the fill line).
- Assemble the freezer. Layer chipped ice and rock salt around the can. Crank until the handle becomes hard to turn, adding more ice and salt as needed.
- Remove the dasher, replace the lid. Cover with more ice and salt, then an old towel. Cure for at least 1 hour before serving — this step is essential!
Pro Tip: Make it a family event. Kids love taking turns cranking, and the anticipation makes it taste even better. 🙌

Ingredients
- 3 eggs
- 1 cup sugar

- ¾ cup evaporated milk
- 6 cups whole milk
Instructions
- Beat eggs in a large bowl. Gradually add sugar, stirring constantly. Add salt, vanilla, and evaporated milk. Mix in whole milk.

Tips for Success
- Don't skip the chill (electric method) — warm batter = icy, grainy ice cream
- Don't skip the cure (both methods) — it firms up the texture significantly
- Don't overfill the can or machine — ice cream expands as it freezes
- Use pasteurized eggs if you prefer to avoid raw eggs — check your supermarket's refrigerated section
Frequently Asked Questions
Can I make it ahead?
Yes! Make it the day before and store in a freezer-safe container. Let it sit at room temperature for 5 minutes before scooping.
Can I add mix-ins?
Absolutely — fold in chocolate chips, crushed cookies, fresh berries, or chopped nuts in the last few minutes of churning.
How long does it keep?
Up to 2 weeks in the freezer in an airtight container. Press plastic wrap directly onto the surface to prevent ice crystals.
Can I make other flavors?
Yes! Swap the vanilla for 2 tbsp cocoa powder (chocolate), 1 cup mashed strawberries (strawberry), or 2 tbsp instant espresso powder (coffee).
