Ingredients

  • 6 eggs
  • 2 cups sugar
  • ¼ tsp salt
  • 1 tbsp vanilla extract
  • 13 oz can evaporated milk (1½ cups + 2 tbsp)
  • 1 gallon whole milk
  • Chipped ice
  • Rock salt

Instructions

  1. Beat eggs in a large bowl. Gradually add sugar, stirring constantly. Add salt, vanilla, and evaporated milk. Mix in about a pint of whole milk.
  2. Pour into the freezer can. Fill to the middle of the top board of the dasher (or the fill line).
  3. Assemble the freezer. Layer chipped ice and rock salt around the can. Crank until the handle becomes hard to turn, adding more ice and salt as needed.
  4. Remove the dasher, replace the lid. Cover with more ice and salt, then an old towel. Cure for at least 1 hour before serving — this step is essential!
