Churro Dough
- 250 mL boiling water (add up to 2 tbsp extra if using room-temperature water)
- 140 g all-purpose flour, sifted (1 cup, fluffed and leveled)
- ½ tsp baking powder (optional)
- ½ tsp fine sea salt
- 40 g vegetable oil, divided (3 tbsp)
- 20 g sugar (2 tbsp, optional)
- Vegetable oil, for frying
Cinnamon Sugar Coating
- 100 g white sugar (½ cup)
- 1 tsp ground cinnamon
Chocolate Sauce
- 180 mL water
- 240 g chocolate chips (bittersweet or semisweet)
- 1 tsp cocoa powder (optional)
- 28 g unsalted butter
- Generous pinch of salt
Instructions
Make the Dough
- Sift the flour into a bowl and whisk in the baking powder, if using. Set aside.
- In a small saucepan, combine the boiling water, 2 tbsp oil, salt, and sugar (if using). Heat over high heat, stirring until dissolved.
- Once the water returns to a rapid boil, remove from the heat and immediately add the flour.
- Stir quickly with a spatula until the flour is fully hydrated and the dough forms. This takes less than 1 minute; a few dry spots are fine.
- Cover the pot and let the dough steam for 1–2 minutes.
- Add the remaining 1 tbsp oil and mix until fully incorporated.
- Transfer the dough to a work surface and fold it over itself 4–5 times to ensure even hydration.
- Cover with plastic wrap and allow to cool slightly. The dough should be warm or at room temperature for easy piping.
- While the dough cools, prepare the chocolate sauce.
Fry the Churros
- Pour oil into a deep pot until it reaches 3–4 inches deep. Heat to 350–375°F (175–190°C).
- Fit a piping bag with a closed star tip (Ateco 845 or 846). Transfer the dough into the bag.
- Line a baking sheet with parchment paper.
- Mix the sugar and cinnamon in a shallow dish and set aside.
- Pipe 5–6 inch lengths of dough onto the parchment, cutting with scissors or a knife dipped in water.
- When the oil reaches temperature, gently transfer churros into the oil using a slotted spoon.
- Fry for 2–3 minutes, turning occasionally, until deep golden brown.
- Fry in batches, avoiding overcrowding. Keep oil temperature steady.
- Remove churros and drain briefly on paper towels.
- While still warm, toss generously in cinnamon sugar.
- Serve immediately.
Make the Chocolate Sauce
- Place the chocolate chips in a heatproof bowl.
- In a small saucepan, combine the water, butter, salt, and cocoa powder (if using). Bring to a boil, whisking to dissolve.
- Pour the hot mixture over the chocolate and stir until smooth and glossy.
- Let cool slightly to thicken. Serve warm with freshly fried churros.
- Optional: add a pinch of cayenne or cinnamon for extra depth.
