Beef Pot Pie

Ingredients

  • 1 double crust (store-bought or homemade using the Ultimate Pie Crust Recipe)
  • 1 lb stew beef, cut into bite-size pieces
  • 2 tbsp beef base
  • 8-10 cups water
  • 4 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and diced
  • 1 cup diced and par-cooked asparagus
  • 1 cup frozen peas
  • 2 tbsp butter
  • ½ medium onion, diced
  • ½ bell pepper, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, sliced thinly
  • 4 fresh mushrooms, chopped (or 1 can chopped)
  • ¼ cup shredded Parmesan cheese
  • ¼ cup shredded sharp cheese
  • ¼ cup shredded Mexican blend cheese
  • 1 egg
  • 1 tbsp ice water

Instructions

  1. Place beef into stockpot with 8-10 cups of water and add the beef base. Bring to boil over medium heat, reduce to low and simmer until beef is tender.
  2. If making homemade crust, do so at this time as it needs to rest in the fridge. If using store-bought crust, prep vegetables.
  3. Once beef is tender, place potatoes and carrots into pot with beef.
  4. In a skillet, place butter and sauté onions and garlic until opaque. Add celery and bell pepper until tender.
  5. Add the mushrooms, strain the asparagus after a minute and add to skillet at this time.
  6. Once the potatoes are al dente, add the remaining vegetables and peas.
  7. Preheat oven to 375°F.
  8. Assemble the pot pie by placing 1 crust on the bottom of the dish, add filling and place the three cheese mixture on top, then topping it off with the top crust.
  9. Seal edges and add slits into the top.
  10. Add the water to the egg, mix and brush on the crust.
  11. Bake for 35-40 minutes or until crust is golden brown.

Serves: 4-6
Total Time: 4 hours (includes homemade crust rest time and baking time)
