Beef Pot Pie

Ingredients
- 1 double crust (store-bought or homemade using the Ultimate Pie Crust Recipe)
- 1 lb stew beef, cut into bite-size pieces
- 2 tbsp beef base
- 8-10 cups water
- 4 medium potatoes, peeled and diced
- 2 medium carrots, peeled and diced
- 1 cup diced and par-cooked asparagus
- 1 cup frozen peas
- 2 tbsp butter
- ½ medium onion, diced
- ½ bell pepper, diced
- 2 cloves garlic, minced
- 2 stalks celery, sliced thinly
- 4 fresh mushrooms, chopped (or 1 can chopped)
- ¼ cup shredded Parmesan cheese
- ¼ cup shredded sharp cheese
- ¼ cup shredded Mexican blend cheese
- 1 egg
- 1 tbsp ice water

Instructions
- Place beef into stockpot with 8-10 cups of water and add the beef base. Bring to boil over medium heat, reduce to low and simmer until beef is tender.
- If making homemade crust, do so at this time as it needs to rest in the fridge. If using store-bought crust, prep vegetables.
- Once beef is tender, place potatoes and carrots into pot with beef.
- In a skillet, place butter and sauté onions and garlic until opaque. Add celery and bell pepper until tender.
- Add the mushrooms, strain the asparagus after a minute and add to skillet at this time.
- Once the potatoes are al dente, add the remaining vegetables and peas.
- Preheat oven to 375°F.
- Assemble the pot pie by placing 1 crust on the bottom of the dish, add filling and place the three cheese mixture on top, then topping it off with the top crust.
- Seal edges and add slits into the top.
- Add the water to the egg, mix and brush on the crust.
- Bake for 35-40 minutes or until crust is golden brown.
Serves: 4-6
Total Time: 4 hours (includes homemade crust rest time and baking time)
